It’s fun cooking with friends… well at least it can be and it’s especially fun when you’re making a “joint” dinner and if your part of it consists of this ridiculously easy deliciousness and the other person is slaving away making the guts of the dinner, which by the way was utterly fabulous.  So thank god the positions were not reversed, coz my friends would have been seriously disappointed! HA

Raita

1/2 cucumber, peeled. seeded, grated and squeezed dry

1 1/2 c yogurt, strained through cheesecloth

8 mint leaves, julienne

1/2 lemon squeezed

salt & pepper

raita

Stir everything together, dollop on top of a CURRY!

saffron rice, mung bean dahl, eggplant and tomato curry, raita

I shoveled my way through two plates of this…. yum.

    I’d have two plates of this too and maybe a little more after that,
    Now raita, I can eat alot of it on a vast number of things…it has been a while..I have been nudged so to speak.
