Since Mr Weiss no longer eats fish but he does eat shellfish… it sometimes provides a culinary challenge to come up with different recipes. Here’s one we made this past weekend, a variation on my scallop and cod cake recipe here.
1 lb sea scallops, divided
1 ear corn, shucked and kernels cut off
1 scallion roughly chopped
1 tsp lemon zest + 1 tbsp juice
1 tsp salt
1/2 c breadcrumbs
1 egg beaten
2 tbsp flour
In a food processor add half the scallops, corn and scallion, pulse until you get a coarse mixture. Roughly chop the remaining scallops and place in medium sized mixing bowl, add contents of processor to scallops along with all remaining ingredients, mix lightly until well combined.
On a baking sheet lined with wax or parchment paper, shape into 4 patties. Refrigerate at least 30 mins – 1 hour. Heat a pan 2 tbsp vegetable oil until shimmering, cook burgers roughly 4 mins each side until golden brown. Serve on buns with cilantro mayo.
Cilantro Mayo (adapted from here)
1/2 c mayo
1/2 cilantro leaves
1 tbsp lime juice.
Blend everything together.
