1 c quinoa
1/2 c water
1 onion finely chopped
2 cloves garlic minced
1 scallion finely chopped
1 egg beaten
3/4 c finely grated parmesan
1/4 tsp cumin seeds, big pinch salt & pepper
4 tbsp olive oil
Heat water to boiling, stir in quinoa, bring back to a boil, cover and simmer 20 mins, until water has evaporated and quinoa is soft and fluffy. Put in a large bowl to cool.
Meanwhile saute onion in 1 tbsp olive oil until golden brown. Add to bowl along with cheese, scallions, spices add egg and mix well. Using a 1/2 c dry measure fill and press down to make “patties”, un-mold onto a sheet pan lined with foil/parchment or plastic wrap and brushed with oil. Refrigerate 15 mins.
Heat remaining oil in non stick pan and gently cook until golden brown about 4 mins each side.
