fish pasta

Mr Weiss had this kind of dish at Union Square cafe one night and we have been thinking about it ever since… normally I’m not a mix-me-fish-with-me-pasta type of gal, but this was really good.  Here’s our attempt.

Herbed Fish Pasta

1/2 pd white fish filet boneless and skinless cooked and flaked into chunks

2 cloves garlic minced

1 small onion chopped

2 tbsp olive oil

1/2 c chopped parsley

2 tbsp chopped fresh oregano

zest & juice of one lemon

1/2 cup veggie or fish stock

1/4 c breadcrumbs

Heat olive in in a pan add onions and saute until golden brown, about 6 mins, add parsley, garlic, salt & pepper and flaked fish.  Combine everything and turn off heat.

Cook your choice of pasta, al dente, (we had spaghetti).  Drain. Add to the pan with the fish and add the lemon and broth, gently heat.  Sprinkle with breadcrumbs and serve.
