fake meat pie

I think there tends to be two types of vegetarians, the ones that do not touch any fake meat products with a 10 foot pole and the ones that do…. Thank God I married the latter, there is only some much beans, grains and tofu a meat eatin gal can stomach!  Mr Weiss swears by the Morning Star Farms brands of sausages, sausage patties, meat crumbles, tofurkey and other weird nonsense that I otherwise fully support.

Vegetarian Shepards Pie

1 large onion chopped

2 cloves garlic chopped

2 tbsp olive oil

1/2 tsp dried italian herbs, 1/2 tsp dried thyme, 1/2 tsp crushed red pepper flakes, 1 tsp salt, 1/2 tsp pepper

12 0z soy meat crumbles

16 0z can chopped tomatoes

1 large fresh tomato chopped

2 tbsp tomato paste

1/2 cup dry white wine

1/2 cup each of frozen peas and corn

2 tbsp ketchup

4 medium sized potatoes cut in wedges

1/2 cup milk

2 tbsp butter

1/2 cup grated cheese (parmesan or chedder or a mix) + 1/4 c

In a large skillet heat the oil and saute the onions and garlic until fragrant and translucent, about 5 mins.  Add the soy crumbles, combine well and brown another 5 mins. Bung everything else in the pan and let it simmer away for about 15 mins.  In the meantime, throw the potatoes into a pot, cover with water and a pinch of salt and boil until mashable.  Drain add the milk, butter and 1/2c parmesan and mash well.

In an 8 x 8 pan (or something similar) pour the meat filling into the pan, cover with the mash potato and sprinkle with the leftover 1/4 c cheese.  Bake 375F for about 20-30 mins until the potato topping is slightly golden and the cheese melted.

You’d never know it wasn’t real meat… well maybe you would.

    Yum, I love this idea! I had an amazing cottage pie a few weeks ago at a restaurant in Seattle called Calamity Jane’s. They used lentils as a base & it was so delicious and comforting. It was for a friend’s memorial, so it was just what I needed.

    it also reminded me that i make a mean lentil, spinach and mushroom pie with a potato topping that i put my secret ingredient in…. vegemite. must remember to post this nugget!
