have lemons?

Make curd!  Yip it’s dead easy,  flippin delicious and how many of you have time to go chasing halfway around the countryside in search of a small expensive pottle of the lemony goodness every time it strikes your fancy.  Not I and nor should you.  Now you can make you own, slather it on scones and stuff your face…. don’t say I never do anything for you.

I adapted this recipe from the Joy of Baking, don’t be put off by the double boiler method…. which can seem like a daunting and a “I’m gonna mess it up” situation.  But it’s not. Really.

Lemon Curd

1/3 c fresh squeezed lemon juice

3/4 c sugar

3 eggs

1/4 stick (4 tbsp) butter cut into small pieces

1 tbsp lemon zest

In a metal bowl, whisk lemon juice, sugar and eggs together.  Set it over a pot of gently boiling water,  stirring constantly until it thickens (about 7-10 mins).  Take off heat, push through a strainer to remove any possible lumps,  add the butter and whisk in completely, add the lemon zest, cool completely and refrigerate.

If you really want to push the envelope try making lime or orange curd and use it for pie and tart fillings, or dolloped on top of scones.

    i love lemon curd – or lemon honey as its is known in my house… and i made my first batch on Tuesday night from the good old edmonds cookbook. So tasty on toast!
