Mr Weiss being the pie maker in our family made this AMAZING thing for our New Years Eve dessert, talk about starting the year off right. Rich chocolate velvety goodness and a fantastic addition of salted peanuts into a graham cracker crust.. thank god we only made a small pie otherwise I might not have been able to contain myself..
Milk Chocolate Salted Peanut Pudding Pie (original recipe here) we halved this original recipe to make a 5 inch pie great for two!
For one 9 inch pie
1/4 roasted salted peanuts finely crushed
2 tbsp sugar
3/4 c crushed graham crackers
4 tbsp butter, melted
3 oz milk chocolate, chopped
3 tbsp sugar
3 tbsp unsweetened cocoa powder (make sure its unsweetened otherwise the pie will be very sweet added to the milk chocolate)
2 tbsp + 2 tsp cornstarch
1/8 tsp salt
2 c whole milk
7 oz milk chocolate finely chopped
Whipped cream for serving.
Heat oven to 350F
For the crust. Mix peanuts, sugar, cracker crumbs and butter in a bowl until mixture is evenly moistened. Spread evenely over the bottom and up sides of pie plate. Bake for 12-14 mins, until the crust begins to set and is slightly darker. Remove from oven and carefully sprinkle chocolate evenly over the bottom and up sides of crust. The heat will melt the chocolate and then using a spoon or small off set spatula spread chocolate over crust. Cool, then chill about 30 mins.
For the filling, whisk sugar, cocoa, cornstarch and salt in medium saucepan. Add about 3 tbsp of milk and whisk to form a smooth paste. Whisk in remaining milk, stir constantly over medium heat, until pudding thickens and begins to bubble at the edges about 5 mins. Cook 1 minute. then add chocolate and stir quickly until chocolate is melted and pudding is smooth. Pour over crust and smooth top. Cool 1 hour then refrigerate until cold.
Serve with unsweetened whipped cream… fabulous! Happy New Year…
