salsa verde

I threw together with the green-ist tomatoes we had, gave them to Mr Weiss who sparked up grill and charred them off. This is incredibly quick and easy to make and is great compliment to all sorts of food shenangins!

Salsa Verde

10 medium sized green tomatoes (I used a mix of roma and fireworks – which kinda look like plum tomatoes)

1/2 cup cilantro

1 clove garlic

1 jalapeno seeded

1 tbsp lemon juice

1/2 small red onion

1 tsp salt

Everything goes into the food processor and puree it until it still has a semi chunky consistency.

we had ours with a simple grilled shrimp, cabbage slaw and re-fried beans.  Not too shabby!
