cucumber & mint sorbet

Yip I’m playing with my ice cream machine again… this time in anticipation of having a garden over run with cucumbers, what to do, what to do, what to do… well I did this,  what are you going to do?

Cucumber Sorbet

3 cucumbers peeled and seeded

1 c mint infused simple syrup (2 c water, 1 c sugar, 3/4 bunch mint) gently boiled until sugar dissolves and solution is syrupy, strain)

1/4 cup lime juice

1/4 tsp guar gum (available at health food shops)

Once cucumbers are peeled and seeded, chop into chunks and blend until smooth. Depending on how juicy your cukes are you may need to add a little water to blender to get things going.

Line a fine mesh sieve with cheesecloth and strain out pulp.

Discard pulp

Mix the cucumber liquid with the simple syrup, lime juice and guar gum.  Place in ice cream make and churn baby churn.

cool, limey, minty and oh so refreshing!

    Wow. This looks delightful! I’d better get my ice cream maker tub into the freezer! Thanks for the idea.

    These flavors sound so refreshing. I can only imagine how yummy and cooling this would be after something spicy!

    Oh, this is what I am looking for. I just was looking for a cucumber recipe (reading Smithsonian last night – the Polish travel article). Now on to look for a recipe for parsley ice cream and roasted artichokes.

    I love this recipe! I made some minor adjustments though. I cut the sugar by half and added a tablespoon of ginger while pureeing the cucumbers. The ginger adds a mild kick to the refreshing cucumber.

    this may be a silly question, but is there any way to make this if you don’t have an ice cream machine?? 🙂

      Himm you can make a shaved ice, by freezing and then scraping with a fork and re-freezing.
