chocolate ginger cookies

I had a hankering for cookies so when I found these here, I decided they looked good enough to eat and EAT I did.

Chocolate Ginger Cookies (adapted from here and Martha Stewart)

1 1/2 c  flour

1/2 c unsweetened cocoa powder

1/2 tsp salt, 1/2 tsp baking soda

1/2 c butter

2 eggs

1 tsp vanilla

1 c white sugar 1/2 c brown sugar (if you have this combo, if not stick to 1 1/2 c w sugar)

6 oz milk chocolate coarsely chopped into chunks

2 oz dark chocolate coarsely chopped into chunks

1/3 c crystallized ginger chopped

Oven 325F

Combine flour, cocoa, salt, baking soda together.  Cream eggs, sugar and vanilla together in standing mixer.  Melt 1/2 the chocolate and butter together, either in microwave or double boiler method (metal bowl on top of pot of simmering water) until chocolate and butter is melted and combined.  Cool.  Add to mixer, beat until combined.  Add flour mixture, beat again until just incorporated.  Fold in remaining chocolate and ginger.

Refridgerate 1/2 hour (this will help to scoop the cookie dough, it is quite loose)

Line baking sheet with parchment or silpat, scoop 1 1/2 tbsp dough onto tray.  Bake 16 mins.

    does this taste like gingerbread cake and chocolate all wrapped up in a cookie? if so i need to make some this year!

    How funny! I have had this recipe for YEARS! And I made them for the first time this past weekend. THEY ARE DELICIOUS. If you like spiced cookies, if you like chocolate, if you like gooey in the centre goodness… these are for you!
