more kale than you can poke a stick at

Ahhhh the mountains… finally after a torturous past month work marathon I have finally found myself upstate, and not a moment too soon, everything in the garden has gone BAZERK, again! I’m not sure where to start but in the meantime I made  this.

Kale Croustini

3 cups finely chopped kale

4 cloves garlic minced

1/2 onion finely chopped

1/2 tsp crushed red pepper flakes

3 tbsp olive oil

2 tbsp water

pinch good salt & pepper

1/3 c grated parmesan

1 baguette

Heat the olive oil in a non stick pan, saute onions and garlic until golden brown, add kale, crushed red pepper flakes, salt and pepper, cook until kale is wilted, about 5 -8 mins, add the water and cook until it evaporates.  Turn off heat stir in the parmesan and serve with a good crusty baguette.
