fried green tomatoes

Yip you knew this one would be coming… right?

Fried Green Tomatoes

2 large green tomatoes cut into 1/2 inch slices (about 2-3 slices per tomato)

2 eggs + 2 tbsp milk beaten with pinch salt & pepper

1/3 c flour

1/3 c cornmeal + 1/3 c panko (or regular breadcrumbs) mixed + 1/2 tsp paprika

veggie oil for shallow frying

Slice tomatoes and dip into flour, then egg then cornmeal panko mixture.

Heat enough veggie oil, over medium heat,  in non stick pan about 1/2 or to shallow fry.  Fry coated tomato pieces until golden brown, about 2-3 mins each side.

Drain on paper towels. If you are doing large amounts, keep the cooked tomatoes on a tray in a pre-heated low oven to keep warm and change out the oil after every couple of batches.

we ate ours with a dollop of my tomato chutney, sauteed Kale and some roasted veggies.

Using panko breadcrumbs with freid green tomatoes is such a good idea! Fried green tomatoes are my grandma’s favorite, maybe I’ll make a batch this way and surprise her! Great post!
