If you have these 3 ingredients, a can of corn, 1 egg and about 3 tbsp of flour, you can make these fritters, yes you can, yes you can… trust me the rest of the ingredients are pure fluff, you can dress it up any which way you want…. just follow the random amounts and it will work… yes it will, boy you really need some convincing!
Sweetcorn Fritters
1 can whole kernel corn, drained
1 small onion, or shallot chopped fine
2 cloves garlic minced
1/2 tsp crushed red pepper flakes, big pinch salt and pepper
any herb you have kicking around I have used parsley, thyme, oregano, rosemary, scallions or a combination of any you like (about 3 tbsp worth)
1/4 c grated cheese, any kind (chedder, parm, asiago, blue cheese!)
1 egg
3-4 tbsp flour (enough to bind)
veg oil & butter for frying
Tip everything into a bowl and combine. Yeah that’s about it. Heat some veggie oil and a knob of butter in a non stick pan, drop heaping spoonful and shallow fry, over low heat until golden brown, about 2 mins each side. My pan usually fits with room, 4 fritters at a time and I like to wipe out pan between batches. Good for breakfast (with eggs), lunch or dinner (with salad).
And when summer rolls on over, substitute the canned corn for the sweet real deal, just cut off the kernels, no need to precook.
Makes about 8 – 10 fritters depending on your spoon size.

I bookmarked this because it is fun – and there are days (day before grocery shopping) when those three ingredients may be the only thing in the house!
Yum, I’ve made something like this before and they were great. Thanks for the reminder…I like that you mention you could eat with eggs for breakfast. I think I’ll do just that!
