peppercorn soda

I had this recipe ripped from a magazine page…. made it for a test photo shoot last year… it’s a great summer mocktail.

Peppercorn Soda

8 star anise

2 tbsp whole pink peppercorns

1 tbs whole cloves

3 c water

1 c sugar

1/2 c fresh thyme sprigs

4 c chilled club soda

Method

Toast anise,2 tbsp peppercorns and cloves over low heat in small skillet until aromatic, stir often. Wrap in cheesecloth and lightly crush with rolling pin. Bring water and sugar to boil, add cheesecloth spices and thyme sprigs and let steep 20 mins. Strain, chill until cold.  Pour a nice shot of syrup into glass filled with ice and finish off with club soda, garnish with thyme and peppercorns.  For added decoration make fresh ice cubes with thyme leaves and peppercorns in them.
