Catskill cookies

What? yes Catskill cookies, I’ve named my own cookie, like it or lump it, but I LOVE it!  I felt I had to redeem myself from the brown sugar cookie fiasco… so with the help of coconut and quinoa, we came up with a cookie packed full of stuff inspired by the “world famous”, well in NZ and OZ at least, ANZAC cookie… see yes Australians and New Zealanders can come together, in a kitchen full of sharp knives and not mame or sabotage each other… witness the goodness below.

Catskill Cookies

1/2  c rolled oats

1/2 c rolled oats coarsely ground

1/2 c almond meal

1 c  shredded coconut (unsweetened)

1/2 c flour

1/2 c pecans, lightly toasted (5 mins) coarsely chopped

6 tbsp butter melted

1/4 c maple syrup

6 dates roughly chopped

2 ounces bittersweet chocolate, roughly chopped

1/4 tsp cinnamon

1/4 tsp salt

1/4 tsp vanilla

Heat oven 325 F

Combine all the dry ingredients together.  Add the butter and the maple syrup, mix well, stir in chocolate, pecans and dates.  Scoop 1 1/2 inch balls, on parchment lined cookie sheet, gently flatten. Bake 17-18 mins until golden brown.  Cool on rack.

    Looks tasty! I’m going to make it without the dates and replace with MORE chocolate, k? 🙂

    Sounds yummy! are they chewy centred? come on describe them to me!! any plans for the local Farmers market???

    I can confirm that they are delicious,with a chewy center and crisp edge, mapley, buttery and chocolatey….so good I ate them for dinner in the car on the way home!

      basically ground almonds… it will say “meal” or “ground”

    We are headed to NZ in 10 days. I will have to check out the cookie and then make your version! Any foodie tips for travel in NZ?

    Gabriel, you can grind almonds yourself in the food processor.

    For a minute I thought the cookies were going to have quinoa in them and I was all ick (I’m not a fan of quinoa) but this sounds great. maple syrup, oats, chocolate, mmmm.

    I think when the Aussies and Kiwi’s get together and bake these cookied and they each give it the’re special touch they would probalbly find it amazing. Im passing this one on to Patrick.
    To all af you who feared putting quinoa in your cookie. Be adventurous. I think it could work right well. Lots of interesting things can be done with quinoa. Youl’d be sirprss.
