So Mr Weiss and I have made a decision to really try stick to the list of sustainable fish, what you don’t have your list? you can find it here… so Talapia you are my new best friend. I know it’s not terribly exciting, but Mr Weiss has come up with a great coating concoction that kicks this baby up several notches! Move aside boring old Talapia and say hello to your much more fancier cousin.
Sesame Coated Talapia
1 pd Talapia filets
1/2 c sesame seeds
1/2 c flour
1 tsp cumin
1 c panko (japanese breadcrumbs)
salt & pepper
1 egg beaten
vegetable oil for shallow frying
Mix the flour, salt and pepper together in one bowl. Mix the panko, cumin and sesame seeds in another bowl. Dip you fish filets into the flour then the egg then the panko and coat to well. Shallow fry 4 mins each side until golden brown.
makes a killer fish sandwich the next day….
