Mr Weiss LOVES shrimp and seeing as its either this, tofu or vegetables, I try to steer it towards the shrimp corner whenever I damn well can!
Ginger Lime Shrimp Skewers
1 lb medium shrimp peeled and deveined
1 2 inch piece ginger peeled and grated
1 shallot minced
zest & juice of 1 lime
1/4 tsp crushed red pepper flakes
1 tbsp chopped cilantro
1/4 tsp salt & pepper

Combine all the marinade ingredients (except salt & pepper), add shrimp, toss and marinate at least 30 mins or longer. When ready to cook, add salt and pepper and toss, thread 3-4 shrimp per skewer and b/q them until opaque and gorgeously charred! about 3 mins each side. (we usually get about 4 skewers each with 3 shrimp on it).

Stuffed Poblano Peppers
1/2 onion chopped
4-6 button mushrooms sliced
2 cloves garlic chopped
1/2 tomato seeded and chopped
1/4 tsp cumin, 1/4 tsp coriander (both ground), pinch salt & pepper
1/4 cup re fried beans
1/4 cup cheese
2 poblano peppers, decapitated seeds and veins removed

Char peppers on the grill till nice and blackened, saute onions and garlic until soft and golden brown, add mushrooms, tomato and re fried beans, cook 3-4 mins until softened and all incorporated. Cool, add cheese, stuff inside peppers, wrap in foil, throw back onto the good ole grill, char again for another 5 mins.

throw something green on your plate and you’re good to go!

Are Poblano peppers hot? or they like capsicums? Your grilled dinner looks yummy, prawns are one of my favourites also.
poblano is a darker greener pepper, not a capsicum and yes a bit hotter, but you can make this recipe using any pepper.
Gotta get a grill – those poblano’s look scrummy!
